ImageSets are basically a 'sprite map' or a way to slice up a single image into multiple images. Look n feel files are used to define how a widget looks sort of structurally, it pulls in images from image sets, fonts from font files, etc. There is a look n feel editor in the works, but its not available yet. The best way I've found is to just take a look at the files shipped by CEGUI itself. Change a setting or two, try it, see what it does and keep working till you got what you want for a widget. There are also the demos which show some other things you can do as far as building layouts etc.

Also, never forget there is some pretty decent docs here: http://www.cegui.org.uk/docs/current/ you'll find that the XML file format documentation is listed at the bottom
