Ok, I've finally got the xerces library to compile and CEGUI now recognises that it's there...
My question is, what do I need to do to get CEGUI compiling, I have gone in as root, run configure and make install and it looks as though it's worked (although there is an error towards the end that there is no target to make install for the Renderer class I think). However, are there some paths that I need to set for it to link into OGRE? I've put it in a Dependencies directory in the top Ogre directory (like on my Windows install) but is there something special I have to do to compile the Gui sample? At present I begin making the Ogre stuff (including the Gui sample) and it tells me that there are undefined references for things like CEGUI::String in CEGUIString.h etc.
Sorry if I'm making a mess of this and confusing anyone, Linux isn't normally my bag but we have to use it for a project at Uni!
If anyone can kick me in the right direction I'd appreciate it...

After installing CEGUI you'll have to go back to OGRE and compile the OGRE CEGUI Renderer. You can do this by doing a make and make install in the OGRE source root.
