I'm currently in the process of modifying the Linux build so that you can enable/disable renderers as needed. The new process will build the appropriate renderer if 1) its installed already 2) --disable-<renderer-name>-renderer hasn't been set. Otherwise it will skip to the next renderer.
Of course at the moment OGRE is the only renderer that works under Linux, but I'm trying to future proof this a bit.

Yes, it's a very good idea.
I'm hoping to (finally) get the OpenGL renderer into CVS very shortly (meaning over the next 2 weeks), and this will become another option under Linux, so having control over which renderers get built will be quite important.
Also, Irrlicht runs under Linux, so in theory the renderer for this engine could also be included for the Linux build. Having said this, I have not gotten around to testing it yet, so I can't confirm compatability.
